Flour mills: wheat moisture and protein vary, tempering by habit

Why changing wheat moisture and protein make tempering a guess in flour mills, what it costs in quality and yield, and how to check it from mill data.

Wheat moisture and protein vary, but tempering water is set by habit

What happens. Every lot of wheat arrives with its own moisture, hardness and protein. Before milling, water is added and the grain rests in the tempering bins. The water dose is set from a moisture reading at intake or by the miller’s experience, and the resting time follows the bin schedule more than the grain.

What it costs. Grain that is too dry or too wet when it reaches the rolls mills differently: flour yield drops, ash and starch damage shift, and the bakeries notice. Over-tempered stock sifts poorly; under-tempered grain shatters its bran and costs extraction.

Why the usual fix fails. A single moisture measurement at the dampener does not show how the water spreads into the kernel during resting. Fixed water tables per wheat type ignore lot-to-lot differences.

How a fixed-price remote diagnosis checks it. From intake and dampening records (moisture readings, water dosed, flows, bin times, temperatures) with flour lab results I check how well the moisture at first break can be computed. The fixed-price remote diagnosis shows whether tempering controlled on a computed moisture value could give steadier flour quality and yield.
